I've heard about the mono problem with guitar hero III but I'm thnking of getting the game and I'm not sure wheather it'll be stereo. Will they still be selling the old discs? If so is there a expriary date on when I can send the disc in?

You should ask the dealer when the discs shipped, he should know. If they're after April the problem should be resorved. Otherwise you can just have it sent to Activision and they'll replace it free of charge.
