OK I guess I'll be the first guy to use this :P I have an almost complete UU team, but I'm unsure of what the last two should be. They are there in it, but I'm not sure if those are the best movesets or even pokemon for this team.
Spoiler
The big bang theory of pokemon is as long as there are no ghost/steel/rock types on the opposition, something's going down from a super powerful explosion. Alright, it's not official or anything, but that's my theory behind the move explosion. After being exploded from the last enemy pokemon and losing(guess that's not a rule anymore) I decided to abuse the move myself. The team is so far, after so many failures, my best UU team.
Finding out what the opposition actually has and scouting for ghosts and potential protect/substitute users(like swellow) is my first step toward abusing explode. This doubles as a steel killer, which is also needed. Will-o-wisp with care, but if I suspect no switches into no guts users, it'll cripple physical attackers. Flamethrower for STAB and such and hidden power rock was chosen over any other for the sake of two pokemon, altaria and moltres, which could pose problems for the rest of the team and an extra tool against them doesn't hurt.
This is probably the most reliable ghost-type destroyer in UU. Heck, I've seen it destroy OU ghosts with ease. It has the bulk, and if adamant, the strength to come in on most ghosts and destroy it. The only ghosts that can attempt to not feel Umbreon's wrath are Spiritomb and baton passing Drifblim. Taunt stops dusknoir from resting off damage or anything, and also stops umbreon from being setup fodder. It also works well with sucker punch and pursuit. Wish is just there, but many others like Arcanine and Claydol greatly appreciate the support and so does Umbreon itself so it works. This also is a great counter to many psychic types, with Slowbro and Sloking in mind which could only be stopped by an explosion.
Dubbed the most powerful explosion in the game and the star of the team. Anything that isn't steel, rock, or ghost type, has no damp ability, and doesn't carry protect or a fast sub is either obliterated or at least dented. Chople berry is to take a fighting move, should the problem pokemon that needs an explosion in the face uses fighting moves. Earthquake takes care of rock/steel types and Return for just in case I don't feel like exploding yet. Substitute helps ease prediction in case I'm in a corner where I have to use Lickilicky early or if I predict protect/sub.
If this doesn't lure a ghost I have no idea what will. Arcanine and Altaria appreciate the rapid spin support and the whole party loves stealth rocks on the opposing field. Earthquake is a good STAB and explosion to follow the theme.
steel/rock killer
Poliwrath (M) @ Leftovers
Ability: Water Absorb
EVs: 252 HP/252 Atk/6 Spd
Adamant nature (+Atk, -SAtk)
- Brick Break
- Bulk Up
- Ice Punch
- Waterfall
Poliwrath does a lot for this team. Not only does it give those pesky steel and rock types trouble, it also has dependable resistances. I stole smogon's set, but it still had hypnosis on the 4th slot and not waterfall, so it was clearly outdated and I put waterfall on there to make up for the hypnosis nerf of platinum. Waterfall also helps with coverage like slamming fire types and such. This pokemon was not the only one I was thinking of placing in this slot. I was also thinking of quagsire or gastrodon, who play a similar role.
This has a similar role to poliwrath, which is to use its useful resistances to come in on stuff its teammates can't handle(like blazeken) and threaten the rest of the team with Earthquake or outrage. This set has been working for me, but if there is any other set/pokemon that you think will do better just let me know.
By the way, thanks for the links for the pics.

Ok that's a rather old Arcanine lead set and a new one which counters the new threats in HG/SS have popped up. It looks like this:
Arcanine@Lum Berry|Adamant Nature
192 HP / 252 Atk / 64 Spe
Flare Blitz|Extremespeed|Toxic|Hidden Power [Grass]\Overheat
For that last set, I'd recommend Hidden Power Grass for you because you don't really have a way to deal with Quagsire.
I'm just gonna ask you to read the Anti Lead set on this page because everything I have to say is stated directly here: Arcanine (D/P) - Smogon University
Umbreon seems out of place in there and maybe your team could benefit from Spikes a LOT because sweepers like your Alteria have much easier sweeps with Spikes. Possible spikers in UU are Froslass, Omnastar and Quilfish. Other than that I see a bit of a problem with a lack of Special Attackers. This isn't really as a big as a problem because the only real Physical walls in UU are Slowbro and Tangrowth but Arcanine handles both of them pretty easily. Be sure to Toxic before straight out attacking them so that if Arcanine dies, they can still be handled.
Other than those few nitpicks I really like the theme of the team. Just come back if you need help with descriptions.
^If the Arcanine is going to be using a sp. attack, wouldn't a Lonely or Naughty nature work? One other thing, that Claydol has an uneven number of Attack EV's, 114 divided by four doesn't equal a whole number.
@ Nolie. I figured my Arcanine would need some fine tuning after using it for a bit. Roar sounded good on a lead in theory, but it kind of sucks i practice and W-o-W is dangerous to use in UU. I'll change it around for sure.
Umbreon is actually an asset to the team. As I stated, it destroys ghosts that try to block rapid spin/explosion which is important for a team trying to pull of an explosion. It also counters slowbro/slowking which was something I overlooked. Psychic types, while not always dangerous, are also kept under control. Even fragile sweepers like Swellow are kept in check by sucker punch, which 2HKOs.
Altaria, however, is quite out of place and could be replaced with a spiker.
@ Ballade I might pour the extra 2 EVs in a stat from time to time, especially since the movesets I'm showing are copypasta from shoddy. It's just easier to "fill" the rest of the EVs for me since I find it easier working with a 0 at the end instead of an 8.
Which reminds me, another good tip you might want to add for shoddy users would be how to copy/paste your team. It saves time, making RMTs less daunting.

It's not to hard to write out but if you care to explain it a little more I'll put it in there with credits to you. I think you save it as notepad or MS word and then copy paste it right? Hope we've helped.
1. load up your team in the "edit team" tab so you are in the team builder
2. Click "Tools" and under "Tools" click "export to text"
3. highlight the pokemon and its moveset in the "export to text" box
4. while holding ctrl press c
5. you now have copied your shoddy pokemon
Would you like pics too? or is the description good enough?
EDIT: you have definitely helped. My arcanine was rather mediocre:P
