That "advantage" is given to both players though, plus some items are difficult to get kills with and when used by the right person just give your character a broader move set.

If a player truely has skill they can catch items, grab them while attacking and should in theory never get hit by them by a player with a lower skill level. This DOESN'T account for items like smash balls and hammers though, they were put in the game to make people with less skill a threat in a match.

All items aren't "pick up and throw" items. Fans, bats, beam swords, etc. are examples of items which can easily rape anyone simply by pressing A and have no real hard counters.
